  1. 1. A beta-phosphoglucomutase in carbohydrate metabolism of Lactococcus lactis

    Author : Ny Qian; Teknisk mikrobiologi; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; mykologi; virologi; bakteriologi; Mikrobiologi; mycology; gene regulation; beta-phosphoglucomutase; maltose metabolism; lactate; metabolic engineering; alpha-phosphoglucomutase; Lactococcus lactis; Microbiology; virology; bacteriology; Biochemistry; Metabolism; Biokemi;

    Abstract : Phosphoglucomutase (PGM) catalyzes the reversible conversion of glucose 1-phosphate to glucose 6-phosphate. Two distinct forms of PGM have been purifed and charactierized in Lactococcus lactis growing on maltose: one specific for the alpha-isomer, and the other specific for the beta-isomer of glucose 1-phosphate. 2. 2. Lactic acid production: extractive fermentation in aqueous two-phase systems

    Author : Jordi Planes; Teknisk mikrobiologi; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; gel excludion chromatography; polyethylenimine; ethylene oxide propylene oxide; phase forming polymers; aqueous two-phase systems; extractive fermentation; Lactococcus; Lactobacillus; Mikrobiologi; bakteriologi; virologi; mykologi; bacteriology; virology; mycology; Microbiology;

    Abstract : There is an increased interest in the microbial production of lactic acid as a raw material for the synthesis of lactic acid polymers as biodegradable plastics. However, two factors limit the economical competitiveness of lactic acid production by microorganisms: lactic acid inhibition, which decreases both fermentation rate and the maximum lactic acid concentration, and the efficiency in the recovery of lactic acid. 3. 3. Fermentation of wheat starch hydrolysate by Lactococcus lactis: Factors affecting product formation

    Author : Karin Hofvendahl; Teknisk mikrobiologi; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; nutrients; temperature; pH; optical isomers; maltose; wheat; starch hydrolysate; Lactococcus lactis; lactic acid; SSF; Microbiology; bacteriology; virology; mycology; Mikrobiologi; bakteriologi; virologi; mykologi;

    Abstract : Lactic acid exists as two optical isomers, D- and L-lactic acid. For the production of biodegradable poly-lactic acid an optically pure product is desirable, but a racemate of known and constant ratio can also be used. Lactic acid can be produced either synthetically or fermentatively. READ MORE

  4. 4. Metabolic Engineering of Disaccharide Catabolism for Polysaccharide Formation in Lactococcus lactis and Streptococcus thermophilus

    Author : Fredrik Levander; Institutionen för immunteknologi; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; Kemiteknik och kemisk teknologi; Chemical technology and engineering; metabolic engineering; exopolysaccharide; polysaccharide; disaccharide; Streptococcus thermophilus; lactic acid bacteria; Lactococcus lactis; Biochemical technology; Biokemisk teknik; Microbiology; bacteriology; virology; mycology; Mikrobiologi; bakteriologi; virologi; mykologi;

    Abstract : Exopolysaccharides (EPSs) produced by the lactic acid bacteria (LAB) Lactococcus lactis and Streptococcus thermophilus are important for the rheological behaviour and texture of a variety of fermented food products. Furthermore, EPSs from food-grade LAB have potential as food additives and functional food ingredients with both health and economic benefits. READ MORE

  5. 5. Food-Related Gram-Positive Bacteria: Enterotoxin A Expression in Staphylococcus aureus and a New Regulation Mechanism in Lactococcus lactis

    Author : Rong Cao; Teknisk mikrobiologi; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; Lactococcus lactis; multiple inhibition kinetics; dehydrogenase; ATP; ADP; food factors; biopreservatives; staphylococcal food poisoning; SEA; prophage induction; enterotoxin A; Staphylococcus aureus;

    Abstract : Staphylococcal enterotoxin A (SEA) is the most common enterotoxin found in outbreaks of staphylococcal food poisoning (SFP). Based on the amount of SEA produced, S. aureus strains were divided into two main groups, high- and low-SEA-producing strains. READ MORE
