  1. 1. Inhibition of Calcium and Zinc Absorption by Phytate in Man Methodological Studies and Hydrothermal Processing of Cereals to Improve Absorption

    Author : Kerstin Fredlund; Chalmers tekniska högskola; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; barley; wheat; rye; 65Zn; oats; zinc absorption; whole grains; InsP6; hydrothermal processing; calcium absorption; rice; radionuclide technique; 47Ca; extrinsic labelling; phytate; hydrothermal treatment; myo-inositol; calcium retention; whole-body counting;

    Abstract : A mathematical model based on measurements in a whole-body counter described the retention of calcium in the human body. It was shown that the relative retention of intravenous and orally administered 47Ca in all subjects (n = 10 - 11) were well described by fitting a simple function of time with two free parameters to a few whole-body measurements after day 6, when the unabsorbed calcium had been excreted. 2. 2. Absorption and accumulation of cadmium from cereal grains

    Author : Anncatherine Moberg Wing; Umeå universitet; []
    Keywords : cadmium accumulation; cereal grains; dietary fiber; iron status; pregnancy;

    Abstract : Cadmium (Cd) is a potentially toxic trace element. Cereal grains contribute one-third to one-half of the Cd exposure via the diet. Among cereal grains, wheat generally contains the highest Cd concentration and the bran and germ fractions contain more Cd than the endosperm. READ MORE

  3. 3. Alkylresorcinols as biomarkers of whole grain wheat and rye intake

    Author : Rikard Landberg; Sveriges lantbruksuniversitet; Sveriges lantbruksuniversitet; []
    Keywords : LANTBRUKSVETENSKAPER; AGRICULTURAL SCIENCES;

    Abstract : Dietary biomarkers are objective measures of food or nutrient intake and can be related to endpoints in epidemiological studies, used in the validation of dietary assessment instruments and used to check of compliance during intervention studies. Alkylresorcinols (AR), phenolic lipids present exclusively in the outer parts of wheat and rye grains, have been suggested as biomarkers of whole grain wheat and rye intake. READ MORE

  4. 4. Glycaemic Response in Relation to Gastric Emptying and Satiety in Health and Disease

    Author : Joanna Hlebowicz; Kardiovaskulär forskning - immunitet och ateroskleros; []
    Keywords : Diabetes; Cinnamon; Satiety; Healthy subjects; Gastroparesis; Blood Glucose; Ultrasound; Gastric emptying; Whole-kernel; Dietary fibre; Beta-glucan; Wheat; Oat;

    Abstract : Dietary fibre and whole grains are recommended to prevent the development of type 2 diabetes. Low glycaemic index foods that are rich in fibre are recommended to control blood glucose levels. Gastric emptying, together with other factors, regulate the postprandial blood glucose response. 5. 5. The role of whole grains and lignans in lifestyle diseases : emphasis on prostate cancer and type 2 diabetes and their risk factors

    Author : Anne Kirstine Eriksen; Sveriges lantbruksuniversitet; Sveriges lantbruksuniversitet; []
    Keywords : MEDICIN OCH HÄLSOVETENSKAP; MEDICAL AND HEALTH SCIENCES; MEDICIN OCH HÄLSOVETENSKAP; MEDICAL AND HEALTH SCIENCES;

    Abstract : Whole grains are rich in dietary fibre and bioactive compounds and have consistently been associated to improved health and lower mortality. Whole-grain rye is rich in fermentable fibre and lignans, that are converted to enterodiol and enterolactone by the gut microbiota. READ MORE
