  1. 16. Physicochemical properties of root fiber suspensions. A comparison between parsnip (Pastinaca sativa) and yacon (Smallanthus sonchifolius)

    Author : Alejandra Castro; Avdelningen för livsmedel och läkemedel; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; physicochemical properties; parsnip; yacon; plant suspensions; particle size distribution; rheology; fructans; dietary fiber;

    Abstract : The physicochemical properties of two root suspensions, parsnip (Pastinaca sativa) and yacon (Smallanthus sonchifolius), were studied and compared at different concentrations and after being subjected to processes such as homogenization and heating. The study and the evaluation of the physicochemical properties of these plant materials in the form of pastes might help to increase the interest in these two roots, and possibly encourage their further industrial use. 2. 17. Fermentation of quinoa, canihua and amaranth to degrade phytate and improve mineral bioavailability

    Author : Vanesa Castro-Alba; Avdelningen för livsmedel och läkemedel; []
    Keywords : LANTBRUKSVETENSKAPER; AGRICULTURAL SCIENCES; TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; Quinoa; Canihua; Amaranth; Iron; Zinc; Calcium; Phytate; Fermentation; Accessibility; Bioavailability;

    Abstract : Plant-based diets are the main source of nutrients for vegetarians worldwide and for low-income inhabitants of developing countries, such as in rural areas of Bolivia. These diets may contain high levels of mineral inhibitors such as phytate that impairs mineral absorption in the human gut. READ MORE

  3. 18. Development of bixin formulations. Extraction, microencapsulation, dispersibility and photostability

    Author : Cecilia Curi; Avdelningen för livsmedel och läkemedel; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; bixin; annatto; natural colorants; light stability in solid multiphase systems; shelf life extension; auqeous physical stability; encapsualtion efficiancy; spray drying; natural colored candies;

    Abstract : The aril that covers the seeds of the plant species Bixa orellana is composed of the natural colorants bixin and norbixin, phenolic components and native carbohydrates composed of hemicellulose, starch, and a small fraction of proteins. Bixin is a hydrophobic carotenoid that is water insoluble and is mostly used for coloring oil-based formulations. READ MORE

  4. 19. Characterization of Starch Using Flow Field-Flow Fractionation Techniques

    Author : Catalina Fuentes; Avdelningen för livsmedel och läkemedel; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY;

    Abstract : To improve the properties and functionality of starch, it is important to understand the physicochemical and structural characteristics as raw material, after being modified to increase its characteristics and/or during changes due to the processing conditions. For this reason, the objective of the present thesis is to improve the understanding of characteristics and molecular properties like molar mass (M), root-mean-square radius (rrms) and their relation to other physicochemical properties of starch extracted from different sources.
