  1. 6. Physiological and biochemical aspects of vegetable processing. A case study on carrots

    Author : Federico Gómez Galindo; Livsmedelsteknik; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; Food and drink technology; Livsmedelsteknik; mild blanching; antifreeze proteins; cell wall; cold acclimation; carrots; metabolism;

    Abstract : The aim of the present study was to enhance our understanding of vegetables as living organisms, interacting dynamically with the environment, and to explore the possible influence of metabolic changes on subsequent processing operations. Growing conditions, harvesting and handling in the packing house and storage conditions are key events leading to a defined “physiological status” of the vegetable that is going to be consumed as a fresh product or a processed product. 2. 7. Heat-Induced Cell Membrane Injury of Vegetable Tissues -An applied study on potatoes

    Author : Gerardo Gonzalez-M; Livsmedelsteknik; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; Livsmedelsteknik; Food and drink technology; PME; active transport; Cell membrane injury; potatoes;

    Abstract : Heat processing of vegetables involves the use of temperatures above the physiological limit which affect the cellular structures of the tissue and induce a series of events at cell level that will in turn be reflected in the transport properties of the tissue. One of the most important cellular structures from the mass transport point of view is the cell membrane since it represents the physical barrier to the transport of nutrients into and out of the cell. 3. 8. Mixing patterns in Rushton-turbine-agitated reactors

    Author : Fabrice Guillard; Livsmedelsteknik; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; Food and drink technology; coherent mixing structure; geometrical analysis; dynamic structural analysis; conditional sampling; laser-induced fluorescence; mixing; stirred tank; Livsmedelsteknik;

    Abstract : This Ph.D. Thesis concerns the study of mixing in Rushton turbine agitated reactors. In industrial (bio)reactors, mixing is recognised as a limiting factor that significantly affects the performance of the process. READ MORE

  4. 9. Lipase-Catalysed Lipid Modifications in Supercritical Carbon Dioxide

    Author : Helga Gunnlaugsdottir; Livsmedelsteknik; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; immobilisation support; enzymes; pressure; phase behaviour; flow rate; process parameters; supercritical carbon dioxide; Lipase; lipids; Food and drink technology; Livsmedelsteknik;

    Abstract : The production of ethyl esters (EE) from ethanol and cod-liver oil by an immobilised lipase in supercritical carbon dioxide (SCCO2) is described. This reaction results in a complex mixture of lipid components consisting of triglycerides, diglycerides, monoglycerides and ethyl esters. READ MORE

  5. 10. Particle Deposition Studies in a Laminar Wall Jet - The Hydrodynamic Influence on the Kinetics of Colloidal Deposition

    Author : Anders Göransson; Livsmedelsteknik; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; shielding function; surface blocking; total internal reflection microscopy; laminar wall jet; random sequential adsorption; colloidal deposition; Food and drink technology; Livsmedelsteknik;

    Abstract : In the research area of cleaning and process hygiene it is important to understand the underlying mechanisms behind the deposition of particles and macromolecules onto surfaces. The deposition process is described as the transport of particles to the surface followed by attachment. READ MORE
