Abstract : This thesis focuses on the development of novel processes which combine flow-induced drop deformation and simultaneous temperature-induced gel formation in order to create shaped biopolymer drops. Abstract : This thesis focuses on the kinetics of phase separation and gelation in aqueous mixtures of gelatin and maltodextrin. The structure evolution of these mixtures at different length scales was recorded by confocal laser scanning microscopy (CLSM) and transmission electron microscopy (TEM).
