Omega-3 fatty acids present in fish, namely eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), have been found to have beneficial effects through several mechanisms. 2. Lipid Composition and Deterioration in Light and Dark Muscle of Rainbow Trout (Oncorhynchus mykiss)
Abstract : Nutritionally valuable lipids, including lipid classes and their fatty acids in light and dark muscle, have been determined and analyzed in farmed rainbow trout. Dark muscle was found to have a higher content of total lipids than light muscle, 7.3 wt% versus 3.0 wt%, which was mostly accounted for by neutral lipids, especially triacylglycerols. READ MORE
