Abstract : The influence of storage and processing on the development of lipid oxidation in herring fillets was investigated and related to their composition of lipids, catalysts and antioxidants. 3. Quality of Frozen Rainbow Trout. Effects of different freezing and thawing treatments
Abstract : The effects of different freezing, frozen storage and thawing treatments on the muscle tissue of farmed rainbow trout (Oncorhychus mykiss) were studied.
