  1. 1. Antioxidants in Andean food and meals

    Author : Leslie Tejeda; Livsmedelsteknik; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; Antioxidant capacity; polyphenolic compounds; anthocyanidins; individual food; meals; ans and stan genes;

    Abstract : Abstract The constant need to improve health and to prevent disease in Bolivia, especially in the Andean region with its extreme environmental conditions (high altitude and lower temperatures), motivated us to extend studies of antioxidant sources in foods and plants, since antioxidants are believed to have major health benefits. Spectrophotometric methods, such as ABTS (2, 2’- azinobis-3-ethylbenzotiazoline-6-sulfonic acid) and FRAP (ferric reduction antioxidant power), were used to evaluate antioxidant activity. READ MORE

  2. 2. Technological Aspects of Preparing Porridges Made from Local Crops in Mozambique

    Author : Irene Carvalho; Livsmedelsteknik; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; Child malnutrition; consistency; complementary porridge; developing countries; energy density; carotenoids;

    Abstract : Child malnutrition is one of the major health problems in many developing countries and involves many sectors such as health, agriculture and research. Malnutrition in infants usually develops during the introduction of complementary foods, due to a deficit of nutrients, low energy density and the poor bioavailability of vitamins and minerals leading, in turn, to an increase in the risk of disease and infant mortality. 3. 3. Supercritical fluid extraction of bioactive compounds from berry seeds

    Author : Graziele Gustinelli Carvalho; Chalmers tekniska högskola; []
    Keywords : NATURVETENSKAP; NATURAL SCIENCES; TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; Tocopherols; Carotenoids; Fatty acids; Anti-oxidative activity; Berry seed oils; Microscopy.; Tocotrienols; Supercritical CO2 extraction;

    Abstract : Industrial processing of berries into food and beverages generates seeds as a by-product. Most of these seeds are treated as waste even though they contain valuable biological compounds. An approach to adding value to the process is to extract these compounds from the seeds. READ MORE

  4. 4. Dynamics of astaxanthin, tocopherol (Vitamin E) and thiamine (Vitamin B1) in the Baltic Sea ecosystem : Bottom-up effects in an aquatic food web

    Author : Norbert Häubner; Pauli Snoeijs; Jon Ågren; Rhena Schumann; Markku Viitasalo; Uppsala universitet; []
    Keywords : Baltic Sea; carotenoids; astaxanthin; tocopherols; Vitamin E; thiamine; Vitamin B1; pelagic food web; eutrophication; M74; phytoplankton; zooplankton; sprat; Sprattus sprattus balticus; herring; Clupea harengus; salmon; Salmo salar; cod; Gadus morhua; High Performance Liquid Chromatography HPLC ; electrochemical detection ECD ;

    Abstract : The thesis combines laboratory experiments and field expeditions to study production, transfer and consumption of non-enzymatic antioxidants and thiamine in an aquatic food web. In particular, I (1) documented spatial and seasonal variation of tocopherols and carotenoids in the Baltic Sea pelagic food web, and (2) examined the effects of abiotic and biotic factors on tocopherol, carotenoid and thiamine concentrations in phytoplankton, zooplankton and fish. 5. 5. Experimental Studies on the Regulation of Pigment Dynamics in Phytoplankton and Copepods by Dissolved Inorganic Nutrients

    Author : Lies Van Nieuwerburgh; Pauli Snoeijs; Ulf Båmstedt; Uppsala universitet; []
    Keywords : NATURVETENSKAP; NATURAL SCIENCES; Biology; Astaxanthin; Baltic Sea; carotenoids; diatoms; eutrophication; food web; mesocosms; microalgae; M74 syndrome; oxidative stress; phytoplankton blooms; zooplankton; Biologi; Biology; Biologi;

    Abstract : This thesis examines the role of dissolved inorganic nutrients in generating changes in phytoplankton community and pigment composition and if such changes can affect the production of the antioxidant astaxanthin in the ecosystem via pelagic copepods. The background of my studies is the possible relationship between eutrophication and a reproductive disturbance in Baltic populations of Atlantic salmon (M74), which is associated with astaxanthin and thiamine deficiencies and oxidative stress.
