  1. 6. Solar Assisted Pervaporation (SAP) : A process using membrane pouches and solar energy for the dehydration and preservation of fruit juices in rural and remote areas

    Author : Randi Phinney; Avdelningen för livsmedel och läkemedel; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; membrane; pervaporation; fruit preservation; solar drying; heat and mass transfer; coupling effects;

    Abstract : Drying has been used for thousands of years to preserve foods. One of the first methods used was open air sun drying which exposes foods directly to solar radiation and ambient air. This method is still used today around the world but it remains underdeveloped on the small-scale for two main reasons. READ MORE

  2. 7. Quality of muscle foods : effects of feed and storage time

    Author : Shengjie Li; Sveriges lantbruksuniversitet; Sveriges lantbruksuniversitet; []
    Keywords : LANTBRUKSVETENSKAPER; AGRICULTURAL SCIENCES;

    Abstract : The overall aim of this thesis was to investigate the effects of feed and storage time on meat quality. To study the effect of feed, chicken were fed seven steam-pelleted or nonpelleted rapeseed (RS) diets with different RS inclusion levels (0, 80, 160, and 240 g/kg) for 34 days, and the dietary effects on meat yield, fatty acid composition in meat, and the expression of lipid metabolism-related genes in liver were determined. 3. 8. Structural Studies and Modelling of Oxygen Transport in Barrier Materials for Food Packaging

    Author : Åsa Nyflött; Magnus Lestelius; Ellen Moons; Lars Järnström; Gunilla Carlsson; Chris Bonnerup; Ulrica Edlund; Karlstads universitet; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; Barrier coating; Permeability; Dynamic Mass Transport; Modeling; Diffusion; Polymer; Dispersion; Kaolin; Materials Science; Materialvetenskap;

    Abstract : The requirements of food packages are to ensure food safety and quality, to minimize spoilage, and to provide an easy way to store and handle food. To meet these demands for fibre-based food packages, barrier coatings are generally used to regulate the amount of gases entering a package, as some gases are detrimental to food quality. READ MORE

  4. 9. Stress induced virulence of Staphylococcus aureus and Listeria monocytogenes

    Author : Nikoleta Zeaki; Teknisk mikrobiologi; []
    Keywords : ;

    Abstract : Control of the dissemination of pathogens in the food production chain is an on-going process with new challenges emerging as pathogenic bacteria evolve and express enhanced virulence characteristics. Staphylococcus aureus and Listeria monocytogenes are two notorious pathogens responsible for staphylococcal food poisoning (SFP) and listeriosis: a foodborne intoxication and an infectious disease respectively. 5. 10. Trehalose metabolism and stress resistance in Aspergillus niger

    Author : Åsa Svanström; Sveriges lantbruksuniversitet; Sveriges lantbruksuniversitet; []
    Keywords : NATURVETENSKAP; NATURAL SCIENCES;

    Abstract : Food spoilage by filamentous fungi, moulds, is a global issue of great significance. Mould growth can cause food losses due to deterioration, and adverse health effects due to toxin production. Conidia, asexual spores, are the main factors of dispersal and infection in most food-relevant moulds. READ MORE
