    Abstract : This thesis focuses on the development of novel processes which combine flow-induced drop deformation and simultaneous temperature-induced gel formation in order to create shaped biopolymer drops.     Abstract : Fibrin gel formation is the final result of interaction between multiple plasma proteins; as a result of activation, fibrinogen is converted to fibrin and crosslinking of fibrin occurs by activated factor XIII, which stabilises the formed clot. Fibrin gel networks were studied in purified fibrinogen systems and in plasma samples from patients with cardiovascular complications and healthy individuals, using light-scattering, turbidity, liquid permeation and confocal 3D microscopy techniques.     Abstract : In the baking industry, emulsifiers in the alpha-gel state are used for foam formation. This thesis focuses on some parts of the effects of the emulsifier: how the foam formation and foam stability are influenced by the physical state of the emulsifier, how emulsifiers change the gelatinization and gel formation of starch, and the impact that these factors may have in a true product such as a sponge cake.     Abstract : The objective of this thesis was to explore the functional behaviour of high methoxyl (HM), low methoxyl (LM) and mixed HM/LM pectin gels of different chemical characteristics with emphasis on microstructure and kinetic rheological behaviour. The rheological properties and the structure of pectin gel networks were investigated for pectins under different sucrose, calcium and pH conditions by the means of oscillatory measurements and transmission electron microscopy (TEM).
