Abstract : The gastrointestinal mucus gel layer and blood flow are two important mechanisms for protection at the pre-epithelial and sub-epithelial levels, respectively. 23. Foam Formation and Starch Gelatinization with Alpha-Crystalline Emulsifiers
Abstract : In the baking industry, emulsifiers in the alpha-gel state are used for foam formation. This thesis focuses on some parts of the effects of the emulsifier: how the foam formation and foam stability are influenced by the physical state of the emulsifier, how emulsifiers change the gelatinization and gel formation of starch, and the impact that these factors may have in a true product such as a sponge cake. Abstract : This thesis addresses: (1) studies of direct and mediated electron transfer and kinetics of peroxidases on electrodes and the development of amperometric peroxidase-based biosenors, (2) electrochemical and kinetic studies of NADH oxidation at mediator modified electrodes. The direct and mediated electron transfer of horseradish and tobacco peroxidase were investigated on graphite electrodes by using wall-jet electrode methodology. READ MORE
