Abstract : This thesis focuses on the kinetics of phase separation and gelation in aqueous mixtures of gelatin and maltodextrin. The structure evolution of these mixtures at different length scales was recorded by confocal laser scanning microscopy (CLSM) and transmission electron microscopy (TEM).
