1. Correlating Microstructure with Texture of Particulate Biopolymer Gels
Abstract : The microstructure of particulate biopolymer gels has been studied to comprehend the effect of microstructure on textural properties. Particulate structures have been characterized at different levels by using light microscopy, scanning electron microscopy, and transmission electron microscopy. READ MORE

2. Ellipsometry studies of liquid interfaces: New methodology and applications
Abstract : Adsorption of several surface active agents, such as nonionics, diblock copolymers, triblock copolymers, proteins and phospholipids at the oil/water and air/water has been studied. In order to be able to do this, a new ellipsometry setup, which utilizes light guides, was developed and tested. READ MORE

3. Integrative structural biology of protein fibers: Spider silk and beta-lactoglobulin nanofibrils
Abstract : Proteins found in nature offer a vast range of exceptional materials, including high-performancebiopolymers such as spider silks and whey protein nanofibrils. Fibrous proteins possess immensepotential for developing novel materials suited for various applications, such as medicalbiomaterials or industrial products. READ MORE

4. Phase Segregation and Microstructural Changes in Starch - Protein Systems
Abstract : This thesis presents the study of the phase behavior of starch ? protein systems in relation to their microstructure and mechanical properties. To study the complexity of this multicomponent system, the main components of starch (amylopectin and amylose) were studied separately in presence of a protein (ß-lactoglobulin or patatin). READ MORE

5. Structure-Control of the Rheological Behaviour of Particulate Gels
Abstract : The focus of this thesis is the relation between the rheological and structural properties of mixed particulate gels, based on β-lactoglobulin, determined under both dynamic and static conditions. Rheological characteristics were recorded during formation of the gels, on set gels and during deformation and fracture of the gels, using viscoelastic measurements in shear and in compression and fracture mechanics in tension.
