6. Structure-Control of the Rheological Behaviour of Particulate Gels
Abstract : The focus of this thesis is the relation between the rheological and structural properties of mixed particulate gels, based on β-lactoglobulin, determined under both dynamic and static conditions. Rheological characteristics were recorded during formation of the gels, on set gels and during deformation and fracture of the gels, using viscoelastic measurements in shear and in compression and fracture mechanics in tension. 7. Association and Microstructure in Self-Assembling Catanionic Systems
Abstract : This thesis addresses the phase behavior and phase structure in mixed surfactant-surfactant and surfactant-polymer systems, where the co-solutes have opposite charges (catanionic systems). The initial goal has been to investigate self-assembly aspects in mixtures of single-/double-chained surfactants and bile salt/double-chained surfactants, with the main focus on vesicle assembly in dilute regions. 8. Microstructure and Gelation Behaviour of High Methoxyl and Low Methoxyl Pectin Gels and their Mixtures
Abstract : The objective of this thesis was to explore the functional behaviour of high methoxyl (HM), low methoxyl (LM) and mixed HM/LM pectin gels of different chemical characteristics with emphasis on microstructure and kinetic rheological behaviour. The rheological properties and the structure of pectin gel networks were investigated for pectins under different sucrose, calcium and pH conditions by the means of oscillatory measurements and transmission electron microscopy (TEM). Abstract : The thesis concerns polyelectrolyte gels in contact with oppositely charged proteins and surfactant micelles, and includes of four papers (I-IV). 10. Complexation between hydrophobically modified polymers and amylose. Gelation and competition by surfactants
Abstract : Aqueous mixtures of hydrophobically modified polymers (HMP) with amylose have been investigated by rheology and 1H NMR. Amylose can cross-link HMP chains by forming single-helical inclusion complexes with the hydrophobic side chains of the HMP, leading to thermoreversible, elastic, and thixotropic gels at ambient temperatures.
