  1. 1. Microstructure and Gelation Behaviour of High Methoxyl and Low Methoxyl Pectin Gels and their Mixtures

    Author : Caroline E E Löfgren; Chalmers tekniska högskola; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; NATURVETENSKAP; NATURAL SCIENCES; rheology; kinetic behaviour; LM pectin; transmission electron microscopy; calcium; microstructure; gel formation; sucrose; HM pectin; pectin mixtures;

    Abstract : The objective of this thesis was to explore the functional behaviour of high methoxyl (HM), low methoxyl (LM) and mixed HM/LM pectin gels of different chemical characteristics with emphasis on microstructure and kinetic rheological behaviour. The rheological properties and the structure of pectin gel networks were investigated for pectins under different sucrose, calcium and pH conditions by the means of oscillatory measurements and transmission electron microscopy (TEM). 2. 2. Characterisation of Dietary Fibre Properties to Optimise the Effects on Human Metabolism and the Transcriptome

    Author : Matilda Ulmius; Tillämpad biokemi; []
    Keywords : NATURVETENSKAP; NATURAL SCIENCES; field-flow fractionation; gastrointestinal method; aggregation; solubilisation; pectin; β-glucan; sugar beet fibre; Oats; rye; postprandial responses; microarray gene expression;

    Abstract : It is well established that dietary fibre, especially soluble dietary fibre, has beneficial effects and can prevent diseases associated with the modern lifestyle. This has been explained by the viscous effects of soluble fibre, which can reduce or delay the absorption of carbohydrates and fat in the small intestine, resulting in lower blood concentrations of glucose, insulin and cholesterol. 3. 3. Multivariate Analysis of 2D-NMR Spectroscopy : Applications in wood science and metabolomics

    Author : Tommy Öman; Mattias Hedenström; Bjart Frode Lutnaes; Umeå universitet; []
    Keywords : NATURVETENSKAP; NATURAL SCIENCES; 2D NMR; HSQC; cellulose; ligning; STOCSY; HSQC-STOCSY; crystallinity; biologisk kemi; biological chemistry;

    Abstract : Wood is our most important renewable resource. We need better quality and quantity both according to the wood itself and the processes that are using wood as a raw material. Hence, the understanding of the chemical composition of the wood is of high importance. READ MORE

  4. 4. Content and Distribution of Short-Chain Fatty Acids in the Hindgut of Rats Fed Various Sources of Indigestible Carbohydrates

    Author : Åsa Henningsson; Avdelningen för livsmedel och läkemedel; []
    Keywords : MEDICIN OCH HÄLSOVETENSKAP; MEDICAL AND HEALTH SCIENCES; rats; red kidney beans; Nutrition; Näringslära; oligosaccharides; non-starch polysaccharides; resistant starch; dietary fibres; indigestible carbohydrates; short-chain fatty acids; fermentation;

    Abstract : There is increasing evidence that short-chain fatty acids (SCFA) formed by colonic fermentation of indigestible carbohydrates have beneficial physiological effects. Butyric acid is the main energy substrate for the colonic mucosa and has been implicated as important in the prevention and treatment of diseases of the colonic mucosa, such as distal ulcerative colitis and cancer. 5. 5. Exploring Physico-Chemical Properties and Colonic Fermentation of Pea Hull Fibre and Pea Protein Blends

    Author : Jakob Karlsson; Chalmers tekniska högskola; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; rheology; pea protein; in vitro colonic fermentation; pea hull fibre;

    Abstract : Yellow pea (Pisum sativum L.) is a legume with high protein and dietary fibre content commonly used for human consumption. Yellow pea is consumed as it is but also used as part of food products, in form of protein concentrate, protein isolate, dietary fibre etc. READ MORE
