Abstract : The aim of this thesis was to optimise a hydrothermal process to degrade phytate (myo-inositol hexaphosphate), increase the level of free myo-inositol and preserve phytase activity in cereals with the purpose to achieve products with improved mineral bioavailability. Abstract : Phytate, the main storage form of phosphorus (P) in plant feedstuffs, is indigestible for monogastric animals, and phytases are therefore used as feed additives to increase the digestibility of phytate-P and limit the inclusion of inorganic P. The aim of this work was to optimize a malting procedure to degrade phytate and/or increase phytase activity in barley to improve iron availability and to preserve the content of β-glucan, since β-glucan is associated with health promoting properties and is therefore of nutritional interest.
