  1. 1. Foam Formation and Starch Gelatinization with Alpha-Crystalline Emulsifiers

    Author : Gisela Richardson; Livsmedelsteknik; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; Food and drink technology; Livsmedelsteknik; image analysis.; rheology; microscopy; amylose-lipid complex; gelatinization; dynamical arrest; amylose; starch; sponge cake; foam; emulsifier; alpha-gel; physical state;

    Abstract : In the baking industry, emulsifiers in the alpha-gel state are used for foam formation. This thesis focuses on some parts of the effects of the emulsifier: how the foam formation and foam stability are influenced by the physical state of the emulsifier, how emulsifiers change the gelatinization and gel formation of starch, and the impact that these factors may have in a true product such as a sponge cake. Abstract : Are Divorcing Parents Induced to Choose Joint Custody? An Evaluation Using Implementation Theory: What demands do divorcing parents make in court with respect to custody, under different legal regimes. This question is analyzed using the tools from implementation theory. READ MORE

  3. 3. Mathematical analysis and approximation of a multiscale elliptic-parabolic system

    Author : Omar Richardson; Adrian Muntean; Alfred Schmidt; Karlstads universitet; []
    Keywords : NATURVETENSKAP; NATURAL SCIENCES; Two-scale modelling; two-scale Galerkin approximation; inverse Robin estimates; elliptic-parabolic system; a priori analysis; a posteriori error estimators; Matematik; Mathematics;

    Abstract : We study a two-scale coupled system consisting of a macroscopic elliptic equation and a microscopic parabolic equation. This system models the interplay between a gas and liquid close to equilibrium within a porous medium with distributed microstructures. We use formal homogenization arguments to derive the target system. READ MORE

  4. 4. Characterisation of the Substituent Distribution in Starch and Cellulose Derivatives

    Author : Sara Richardson; Centrum för analys och syntes; []
    Keywords : NATURVETENSKAP; NATURAL SCIENCES; Chemistry; Analytisk kemi; Cationic amylopectin; Hydroxypropyl amylopectin; Ethyl hydroxyethyl cellulose; Substituent distribution; Enzymic degradation; HPAEC-PAD; MALDI-TOF-MS; ESI-MS; Kemi; Analytical chemistry;

    Abstract : Starch and cellulose can be chemically modified to produce derivatives with specific properties. Knowledge of correlations between the modification reaction, substituent distribution and properties is important in order to design modification processes so as to produce derivatives with the desired properties.
