    Abstract : A thorough physical-chemical characterisation of alkylglycosides has been performed. The effects of temperature, salt, concentration and deuterium exchange on the self-aggregation of n-nonyl-b-D-glucoside (b-C9G1) and n-tetradecyl-b-D-maltoside (b-C14G2) have been studied in dilute solutions by static and dynamic light scattering, neutron scattering, rheology, capillary viscometry and tensiometry.     Abstract : Ectomycorrhizal fungi form symbiotic associations with tree roots and assist in nutrient-uptake and -cycling in forest ecosystems, thereby constituting a most significant part of the microbial community. The aims of the studies described in this thesis were to evaluate the potential of DNA-based molecular methods in below-ground ectomycorrhizal community studies and to investigate changes in ectomycorrhizal communities on spruce roots in sites with different N deposition, and in sites subjected to harvesting of forest residues or application of wood ash.     Abstract : It is well established that dietary fibre, especially soluble dietary fibre, has beneficial effects and can prevent diseases associated with the modern lifestyle. This has been explained by the viscous effects of soluble fibre, which can reduce or delay the absorption of carbohydrates and fat in the small intestine, resulting in lower blood concentrations of glucose, insulin and cholesterol.
