  1. 16. Foam Formation and Starch Gelatinization with Alpha-Crystalline Emulsifiers

    Author : Gisela Richardson; Livsmedelsteknik; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; Food and drink technology; Livsmedelsteknik; image analysis.; rheology; microscopy; amylose-lipid complex; gelatinization; dynamical arrest; amylose; starch; sponge cake; foam; emulsifier; alpha-gel; physical state;

    Abstract : In the baking industry, emulsifiers in the alpha-gel state are used for foam formation. This thesis focuses on some parts of the effects of the emulsifier: how the foam formation and foam stability are influenced by the physical state of the emulsifier, how emulsifiers change the gelatinization and gel formation of starch, and the impact that these factors may have in a true product such as a sponge cake. 2. 17. Agro-Waste Derived Additives for Polylactide and Tapioca Starch

    Author : Edwin Azwar; Minna Hakkarainen; Anna Wistrand; Christian Glandfils; KTH; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; Agro-industrial waste; wood flour; rice bran; polylactide; starch; biomass; degradation; SRA - E-vetenskap SeRC ; SRA - E-Science SeRC ;

    Abstract : Development of materials from renewable resources is one of the big challenges facing our world. In this thesis agro-industrial waste derivatives were developed and evaluated as additives for two common renewable polymer matrices, polylactide (PLA) and starch. Two waste products, wood flour (WF) and rice bran (RB) were evaluated in different forms. READ MORE

  3. 18. Material Properties of Starch and Cereal Protein Films and Foams

    Author : Thomas Gillgren; Chalmers tekniska högskola; []
    Keywords : NATURVETENSKAP; NATURAL SCIENCES; TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; foam; avenin; oxygen permeability; amylopectin; water vapour permeability; plasticization; mechanical properties; zein; film; glass transition temperature; kafirin; prolamin; cereal protein; amylose; starch;

    Abstract : Materials that are renewable and biodegradable are demanded for environmental reasons. Biopolymeric materials, such as materials from starch and cereal proteins, are both renewable and biodegradable. However, starch and cereal protein materials are generally rather brittle and therefore need to be plasticized to become more flexible. READ MORE

  4. 19. Bio-inspired cellulose nanocomposites and foams based on starch matrix

    Author : Anna Svagan; Lars A. Berglund; Salvatore Iannace; KTH; []
    Keywords : NATURVETENSKAP; NATURAL SCIENCES; starch; cellulose nanofibers; foam; nanocomposites; cushioning materials; biodegradable; expanded polystyrene; mechanical properties; diffusion; Polymer chemistry; Polymerkemi;

    Abstract : In 2007 the production of expanded polystyrene (EPS) in the world was over 4 million tonnes and is expected to grow at 6 percent per year. With the increased concern about environmental protection, alternative biodegradable materials from renewable resources are of interest. READ MORE

  5. 20. Variations Related to Print Mottle in Starch-Containing Paper Coatings

    Author : Micael Ragnarsson; Lars Järnström; Gunnar Engström; Martti Toivakka; Karlstads universitet; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; pigment coating; porosity variations; coating structure; coat weight variations; starch; dextrin; CMC; latex; print mottle; calendering; pilot coating; offset printing; Chemical Engineering; Kemiteknik;

    Abstract : Starch in paper coatings is known to increase the risk of print mottle in lithographic offset printing. The objective of this study was to increase the understanding of this behaviour. READ MORE
