  3. 3. Material Properties of Cereal Protein Films

    Author : Thomas Gillgren; Chalmers tekniska högskola; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; plasticization; avenin; prolamin; kafirin; mechanical properties; water vapour permeability; oxygen permeability; protein; film; glass transition temperature; zein;

    Abstract : Materials that are renewable and biodegradable are demanded due to environmental aspects. Biopolymeric materials, such as materials from prolamins, fulfil both of these requirements. Prolamins are cereal storage proteins. Examples of such are zein, gluten, kafirin and avenin from maize, wheat, sorghum and oats, respectively. READ MORE

  4. 4. Material Properties of Starch and Cereal Protein Films and Foams

    Author : Thomas Gillgren; Chalmers tekniska högskola; []
    Keywords : NATURVETENSKAP; NATURAL SCIENCES; TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; foam; avenin; oxygen permeability; amylopectin; water vapour permeability; plasticization; mechanical properties; zein; film; glass transition temperature; kafirin; prolamin; cereal protein; amylose; starch;

    Abstract : Materials that are renewable and biodegradable are demanded for environmental reasons. Biopolymeric materials, such as materials from starch and cereal proteins, are both renewable and biodegradable. However, starch and cereal protein materials are generally rather brittle and therefore need to be plasticized to become more flexible. READ MORE

  5. 5. Enhanced edible films of mixed biopolymers for controlled release

    Author : Maria Petersson; Chalmers tekniska högskola; []
    Keywords : TEKNIK OCH TEKNOLOGIER; ENGINEERING AND TECHNOLOGY; acetem; phase separation; mechanical properties; hylon; edible rilm; release; starch; zein; water vapour premeability;

    Abstract : In recent years there has been a growing interest and increased intensity of research in the area of edible films and coatings. Edible films and coatings can improve quality and shelf-life of food products by acting as barriers to e.g. moisture and oxygen, hence preventing dehydration and oxidative reactions. READ MORE
